Easy Chicken & Broccoli Alfredo

A quick cheat version of chicken broccoli alfredo that doesn't require a lot of effort to get the sauce right.

Yield: 4 servings
  • 8 oz. linguine
  • 1 c. broccoli florets
  • 2 Tbsp. butter
  • 1 lb. Chicken Breast
  • 1 can Cream of Mushroom Soup
  • 1/2 c. milk
  • 1/2 c. grated parmesan cheese
  • 1/4 tsp. pepper
  1. Cube chicken breasts.
  2. COOK linguine according to package directions. Add broccoli for last 4 min. of cooking time. Drain.
  3. HEAT butter in skillet. Add chicken and cook until browned, stirring often.
  4. ADD soup, milk, cheese, pepper and linguine mixture and heat through. Serve with additional Parmesan cheese.

Helpful Hints

You can use fresh or frozen broccoli florets. You can also substitute pretty much any pasta for the linguine if you need to. A long pasta is probably a better substitute than something like elbow macaroni, for instance, however.
