Iced Cinnamon Chip Cookies

Sweetened cinnamon cookies! Who wouldn't love these? Recipe found in 'Best and Loved Cookies and Bars' by Taste of Home. These drop cookies melt in my mouth!

Cooking Time: 50 minutes
Post-Cooking Time: 15 minutes
Yield: 46 cookies

Cookies |
- 1 c. butter, softened
- 3/4 c. brown sugar (packed)
- 3/4 c. sugar
- 1 tsp. vanilla extract
- 3 c. flour (all-purpose)
- 1 tsp. baking soda
- 1 tsp. salt
- 1 pkg. cinnamon baking chips

- Using a large mixing bowl, cream butter and sugars. Beat in eggs and vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well.
- Fold in cinnamon chips.
- Drop by rounded tablespoonfuls 2 in. apart onto UNgreased baking sheets.
- Bake at 350 degrees for 10-12 minutes or until golden brown.
- Remove to wire racks to cool.

Icing |
- 1/4 c. butter, melted
- 1/4 c. shortening
- 1 1/4 c. Powdered Sugar
- 1 Tbsp. milk
- 3/4 tsp. vanilla extract

- Using a small mixing bowl, combine icing ingredients and beat on high speed for 1-2 minutes or until fluffy.
- Spread over cookies once they are fully cooled.

Helpful Hints
If the icing comes out too runny, keep adding powdered sugar.
