Apple Cake

It's an apple cake... That's right, a cake, made from apples and appley goodness.

Yield: Makes 8 servings
- 3 tsp. cinnamon
- 1/2 tsp. salt
- 2 tsp. vanilla extract
- 1 tsp. baking soda
- 2 3/4 c. flour
- 3/4 c. Veg oil
- 2 c. sugar
- 1 c. Apple Sauce
- 1 c. walnuts
- 1/2 c. honey

- Preheat oven to 350 degrees. Grease a tube pan. Peel, core and chop apples into chunks. Toss with a little cinnamon and sugar (not part of the measurements but a tablespoon of each will do)and set aside. Set aside the honey too, it will be used at the very end of preparation.
- Stir together flour, baking powder and salt in a large mixing bowl. In a separate bowl, whisk together oil, apple sauce, eggs, sugar and vanilla. Mix wet ingredients into the dry ones. Make sure that all ingredients get mixed in properly. Finally fold the apples into the bowl, the mixture will get thick.
- Pour the batter into prepared pan. Finally drizzle the honey on top of the batter, you may have to warm it if it is a thick honey. Bake for about 1 1/2 hours, or until a tester comes out clean.

Helpful Hints
The walnuts and honey are optional. My cooking school has always been to taste and experimentation, so no two cakes are the same, but this is the basic recipe. Enjoy!
